The Best Guacamole

When my husband and I first got married I would make guacamole all the time. I don’t know why but I craved it religiously. My husband almost always tries anything I cook even if he thinks he is not going to like it. However, he would never try my guacamole. He said he had tried guacamole many times and always hated it.

One day I finally got him to try it and he loved it. So I decided to make it for an appetizer one night while on my husband’s family vacation and it was a huge hit! My husband’s uncle said it was the best guacamole he had ever tasted. By the time dinner was over, there was not a drop left. Now I make it regularly at the Coggins household.

It is not your traditional guacamole. Its consistency is a little bit thinner and has a kick to it. It is good with tortilla chips, on burgers; I even use it as salad dressing. Just drizzle it on anything, you won’t regret it.

The Best Guacamole

The most delicious guacamole that only takes 5 minutes to make!

Ingredients

Scale
  • 1 avocado
  • 1/4 small red onion
  • 6 grape tomatoes
  • 3 garlic cloves
  • 1/2 juice of lime
  • pinch of salt
  • 1/4 cup pickled jalapeños (I use Trader Joes brand)
  • 1/3 cup olive oil

 

Instructions

Put all ingredients into a food processor except for the olive oil. Turn on low and slowly pour in olive oil while the mixture is blending. Blend until all ingredients are mixed thoroughly.

 

Notes

You can add cilantro if preferred, I just don’t use it because my husband hates cilantro.

To keep the guac from turning brown when stored, sprinkle fresh lime juice on top just before placing into the refrigerator.
